As with most apps, the BEST results are obtained with the native format. Anything OTHER than the native format is likely to cause problems especially when considering features that don't exist in the older version.

In this instance, when you get the warning while saving that something didn't get converted right, you need to fix those before you export. In the case of the gradient, you can copy it, open Preview, do Command-N, copy what shows up in the PDF window, then Paste that back into Keynote. Now, you'll have an image that's more likely to show up the way you want it in older versions of Keynote (PowerPoint, since it lacks Keynote's ability to display many different alpha-channel formats, will still have problems even with those)

This is a great advance on the rather crude fills on 08. However, much as I detest PowerPoint, it is light years ahead of Keynote in this area with an amazing variety of 3D fills and professional effects. What's more, you can then save the finished object as an image (jpeg, pdf, etc.) so that it is stays looking the way you intended. With Keynote 09, not only are the fill options pretty limited, but if you save as an '08 file to enable share with colleagues everything new is lost, export to PowerPoint and it never looks right.
Why can't the Apple wizards catch-up with the MS cowboys in the very area that Apple is supposed to be good at - graphics?
